Meze or mezé (/ˈmÉ›zeɪ/, /ˈmÉ›zÉ›/) is a selection of small dishes served as appetizers in Eastern Europe, Turkey, Greece, Israel, Mesopotamia, the Balkans, the Caucasus and Iran. It is similar to Spanish tapas and French, Italian antipasti.
The meze tradition in Levantine cuisine has played a crucial role in promoting the cultural diversity of the region, amalgamating Greek-Turkish and Jewish-Muslim culinary traditions. As appetizers are best enjoyed when shared, this has accentuated that these cultural identities are not only a regional legacy but also an integral part of our global heritage.
By using the term "Levant," which acknowledges and celebrates each country and its rich food heritage, we avoid the oversimplification of grouping the regional cuisines of the "Mediterranean" and "Middle East" under a single label. This is an important detail, as it encompasses a diverse range of culinary traditions, from Israel's religious kashrut food laws to the Halal laws of Muslim countries.

The Levantine Sea is the name of the sea route of Mesopotamia, known since Adam and Eve as the 'fertile crescent' of the world.
It is a floury and flavorful cuisine based on the culinary traditions of the Levants - the sailors who carried food from this sea to the Aegean and Mediterranean coasts.
Levantine cuisine is known for its healthy qualities as many dishes are prepared with olive oil and are vegetarian, vegan or gluten-free. It also has a long and rich history with culinary traditions dating back thousands of years.
